There are two things you can do to automatically start meetings, or at least, not forget starting them.
The first one is turning on "Start and stop meetings automatically" in Preferences > Automation. Doing so starts a meeting automatically based on camera or mic activity.
The second is using the "meeting reminders" feature in Preferences > Sessions. With this option checked, you get a panel similar to the session launch panel but for your meeting at the meeting's start time. You can then press "Star meeting."
